Sweet Potato, Chicken, and Broccoli Skillet
I won’t lie, I’m fairly proud of this one. I was, at the last minute, trying to decide what to make for dinner out of what we already had in the house. I chose these ingredients and proceeded to cook 100% off of feel. Turned out to be very tasty and filling, serving 4-6 adults (I am included in that, and I normally eat the serving equivalent of 2-3…). Added Bonus- this was completely and 1-pan meal, which means less clean up!!
2Tbsp Minced Garlic
2lbs Sweet Potatoes – ½” cubes
1.5lbs Chicken Breast – 1” cubes
1lb Broccoli Florets
1tsp White Pepper
.5tsp Italian Seasoning
*in hindsight, I should have added a bit more heat, maybe some cayenne.
1. Heat 1-2 Tbsp Olive Oil over medium heat.
2. Add Garlic and Sweet Potatoes, cook covered for about 5 minutes, stirring occasionally.
3. Add Chicken and “Seasonings”- keep covered and cook thoroughly, stirring occasionally.
4. Add Broccoli and Raisins- turn heat down to medium-low, keep covered and cook another 10 minutes or until broccoli is bright green and tender. Stir occasionally.
