Food Friday – CHILI!!

I love simple recipes that come together quickly (and I only need to dirty one pot!)  This recipe has huge flavor and makes a TON – so be prepared for leftovers.

1 lb ground pork

1 lb ground beef

1 yellow onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

3 Tbsp tomato paste

2 14.5oz cans crushed tomatoes

1 14.5oz can diced tomatoes

1 14oz can beef broth

1 tsp black pepper

1 tsp basil

1 Tbsp chili powder

Heat dutch oven or large stock pot over medium high heat.  Brown beef and pork together.

Remove meat and all but 1 Tbsp grease from pan.

Add onions and green peppers. Sauté for 2-3 minutes or until veggies begin to soften.  Add garlic and cook 1 minute longer.

Add tomato paste and stir to combine.  Cook 2-3 minutes.

Add 1 can of crushed tomatoes using juice to help loosen any browned bits on the bottom of the pan.  Scrape as much of the browned bits up as you can.

Add remaining crushed tomatoes, diced tomatoes, beef broth and spices.

Bring to a boil. 

Reduce heat and simmer for 45 minutes, stirring occasionally for veggies to continue cooking and flavors to combine.
